Pork Sinigang

This is the first dish that I ever learned how to cook. It’s actually my favorite Filipino dish so I made it a point to cook this perfectly. 🙂 By the way, Sinigang is a preparation of meat or fish cooked with sour fruit, tomatoes, vegetables, and rice water.
Ingredients:
1 kilo pork (liempo or kasim), cut into pieces
2 medium-sized ripe tomatoes, quartered
1/2 cup tamarind fruit OR 2 sachets of Knorr Sinigang sa Sampalok mix
3 medium-sized gabi, chopped
3 medium-sized radish, sliced
1 bundle of okra (around 8 pieces)
2 cups kangkong leaves and stem
8 cups rice water
1/4 tsp. fish sauce (patis)
1 pinch of salt
Directions:
Place pork in a saucepan with rice water. Let it boil. Add tomatoes and tamarind if the pork is already tender. Be sure to remove the skin and seeds from the tamarind once it has softened. Add gabi and the raddish. Add okra when the gabi is already soft. Season with fish sauce and add a pinch of salt. Add kangkong and cook for 5 more minutes. Serve hot. Serves 8-10.
