Monggo Guisado is a native Filipino dish that is a household favorite. The ingredients are quite inexpensive and the dish is easy to make. We love adding crunchy and crackling chicharon bits on top and then serving it with smoked fish (tinapa).
In carinderias, this dish is served only during Fridays. This may be due to the Catholic practice of abstaining from meat on Fridays. During Lent, you may omit the pork and chicharon bits and just add the tinapa flakes to the dish.
For me, this dish gives me a heartwarming feeling that makes me nostalgic–like a comfort food. 🙂
